Stir the mixture together, then season with salt and pepper to taste. Let it cool and rest at room temperature, for 30 minutes to 1 hour. Drizzle with olive oil and add chopped garlic. Remove the octopus from the pot, rinse and place in a bowl. and then continue boiling for 40 minutes. Add in the chopped onion, pepper, olives, parsley, olives, lemon zest, red wine vinegar, and olive oil. In a pot place the octopus and cover with enough water. If you are not serving them right away, keep them in the fridge. Chop the octopus into chunks, and place in a bowl.

  • You will use only 2-3 whole peppers for 12 appetizers (depending on their size). Cut the octopus legs and head and place it in a wide food container. Place a piece of baking paper on the center of the cross and place the octopus on top of it. Cook for approximately 2 hours, or until the octopus feels soft when you prick it.
  • I prefer buying whole roasted peppers and cutting them myself as the strips (that you can buy in some places) don’t hold their shape so well, but you can try yourself. Make a cross with two sheets of foil, about 1.5-2 feet each.
  • Olives are salty enough so seasoning these appetizers with olive oil black pepper and oregano will work just fine!
  • If you are trying to keep sodium levels down, omit the salt completely.
  • There is no need to by a whole cooked octopus as you will not be using the head or the thins tips. Once your octopus is cooked to the point of being tender, you can serve it right away while still hot chill it and then use it like that in cold preparations (I like it in seafood salads) or sear or grill the octopus to brown and crisp the exterior. You will only need 2-3 pieces (depending on their size).
  • Octopus – you will only need a few cooked tentacles so if you find pre-packaged cooked tentacles, I recommend buying those instead of a whole cooked octopus.
